I made a massive haul of meats and cheeses today using my EBT benefits. I went to United Grocery Outlet and Aldi.
At UGO, I spent $61, got mostly beef and ground beef, with a smattering of cheese. I also picked up 6 avocados.
At Aldi, I spent $106, for mostly meats and cheeses. I also found some strawberries. They had the processed meats I like, like salami and prosciutto.
I also found a 10 pound bag of frozen chicken wings.
I got some large ham slices for wraps to use with cream cheese, salami or prosciutto, and thin-sliced strawberries or avocado for a wrap lunch.
I have to portion out the packaged meats, yet.
So, What’s for Supper?
I put some beef short ribs in the slow cooker on HI for 4 hours. I added 1 Tablespoon of BBQ rub (1g carb per tsp), some dried onion, powdered garlic and a 1/2 teaspoon of Cumin.
That should last me for a couple days.
If you hadn’t figured it out yet, I like to snack. I’m not one for sitting at a table to eat a meal. This way of eating is tough for me because a lot of it assumes a family meal time. But, I graze throughout the day. With the foods on this WOE, I don’t need to eat all the time anymore. I seem to want more water (which is GOOD) and less food (which is VERY GOOD).

Chicken Scarpiello is very good! 6 chicken thighs, 3 italian sausage, 2 red bell peppers, 1 onion, 6 pepperoncini and 6 sweet italian cherry peppers with some vinegar. VERY tasty! I added cumin, oregano, garlic, salt and pepper.
I went light on the salt because I added a tablespoon of chicken stock crystals (Knorr brand). I like to add the stock crystals because it seems to enrich the flavors.
This recipe made 8 servings, and I pretty much eat OMAD.
